A Roaster’s Guide to Quality
Choosing the right green coffee beans is the foundation of great roasting. Yet, with hundreds of origins and grades available, how do you identify the best beans for your business?
At Flavy Coffee, we’ve helped 50+ Swedish roasters navigate this process. Here’s our step-by-step guide to evaluating green coffee – so you can buy with confidence.
1. Understand Your Needs
Before sampling, ask:
- “What’s my target flavor profile?” (e.g., bright Nordic light roast vs. chocolatey espresso)
- “What’s my budget?” (Grade 1 Arabica costs ~25% more than Commercial)
- “How important is certification?” (Organic, Fair Trade, etc.)
2. Evaluate Physical Quality
A. Defects (ISO 10470 Standard)
- Grade 1 Arabica: 0-5 defects per 300g
- Grade 2: 5-10 defects
- Commercial: 10-15 defects
Common defects to reject:
- Broken/chipped beans
- Insect damage
- Black or sour beans
B. Moisture Content
Ideal: 10-12%
Too dry (<10%): Brittle, loses flavor
Too moist (>13%): Mold risk
(Flavy’s lab tests every batch)
3. Assess Sensory Potential
Roast Sample Protocol
- Roast to City+ (light-medium) and Full City (dark)
- Cup blind with your team
- Look for:
- Sweetness (not bitterness)
- Complexity (multiple flavor notes)
- Aftertaste (clean finish)
4. Verify Logistics & Ethics
Ask suppliers:
- “What’s the harvest date?” (Within 12 months)
- “Can you share farm photos/coordinates?”
- “What’s the carbon footprint of Sweden?”
5. Start Small, Scale Smart
